These Frankenstein guacamole cups are quick, fun, and perfect for weeknight dinners. Made with simple ingredients like avocados, lime, and tortilla chips, they turn a regular Tuesday into a playful party.

Ingredients

Scale
  • 3 medium or 2 large ripe avocados
  • 2 tablespoons fresh lime juice (about 1 lime)
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ cup finely diced small red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 small jalapeño, seeded and minced (optional)
  • 1 small Roma tomato, seeded and diced
  • 1 large bag tortilla chips (preferably restaurant-style or Tostitos Scoops)
  • 6–8 black olives, sliced into rounds (for decoration)
  • Red bell pepper strips (for decoration)

Instructions

  1. Prep your avocado base: Cut the avocados in half lengthwise, remove the pits, and scoop the flesh into a mixing bowl. Add the lime juice and salt immediately. Mash with a fork, leaving some chunks for texture. Taste and adjust salt if needed.
  2. Add the mix-ins: Fold in the diced red onion, chopped cilantro, minced jalapeño (if using), and diced tomato. Stir gently until evenly distributed. Adjust lime or salt to taste.
  3. Shape your chips: Lay out tortilla chips on a clean cutting board. Press a monster-shaped cookie cutter firmly into each chip, wiggling gently to cut through. You need about 4-5 shaped chips per serving.
  4. Assemble the guacamole cups: Place each shaped chip on a serving platter. Using a small spoon or offset spatula, spread a generous dollop of guacamole onto each chip, leaving a small border around the edges.
  5. Create the Frankenstein faces: Place two black olive rounds near the top of each guacamole cup for eyes. Cut small strips of red bell pepper and arrange them horizontally across the middle for stitched scars. Add two olive slices on the sides for neck bolts. Optionally, add a tiny cilantro leaf as a hair tuft.
  6. Serve immediately: Arrange on a platter with extra plain chips around the edges for dipping. Enjoy while chips are crunchy and guacamole is fresh.

Notes

For best results, use ripe avocados that yield to gentle pressure. Don’t over-mash the guacamole; leave some chunks for texture. Use sturdy chips like restaurant-style or Scoops to prevent breaking. Guacamole can be made up to 4 hours ahead; press plastic wrap directly onto the surface and refrigerate. Assemble just before serving to keep chips crunchy. For a dairy-free version, it’s already dairy-free. For gluten-free, ensure chips are certified gluten-free. To prevent browning, brush extra lime juice on exposed surfaces.
