These Quick Maple Roasted Carrots with Creamy Tahini are a simple yet stunning side dish that comes together in under 25 minutes. Sweet, caramelized carrots are drizzled with a creamy, tangy tahini sauce for a perfect balance of flavors.

Ingredients

Scale
  • 1 pound (about 450g) carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons pure maple syrup
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons well-stirred tahini
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, minced
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 to 3 tablespoons warm water
  • Optional garnishes: toasted sesame seeds, fresh parsley or cilantro, red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel the carrots and cut them into 2-inch pieces. If some pieces are thicker, cut them in half lengthwise for even cooking.
  3. In a large bowl, toss the carrot pieces with 2 tablespoons maple syrup, 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper until evenly coated.
  4. Spread the carrots in a single layer on the prepared baking sheet, ensuring they are not crowded.
  5. Roast for 18 to 22 minutes, flipping halfway through at the 10-minute mark, until edges are golden brown and carrots are tender when pierced with a fork.
  6. While the carrots roast, make the tahini sauce: In a small bowl, whisk together 3 tablespoons tahini, 1 tablespoon lemon juice, and the minced garlic. Add 2 tablespoons warm water and whisk until smooth. Add more water, one teaspoon at a time, until the sauce is thin enough to drizzle (consistency of heavy cream). Taste and add a pinch of salt if needed.
  7. Transfer the roasted carrots to a serving platter. Drizzle the tahini sauce generously over the top. Sprinkle with toasted sesame seeds, fresh parsley or cilantro, and a pinch of red pepper flakes if desired. Serve immediately.

Notes

For best results, don’t crowd the pan—carrots should be in a single layer to caramelize properly. Stir tahini well before measuring. If making ahead, store roasted carrots and sauce separately; reheat carrots in a 350°F oven for 5 minutes before serving. Adjust sauce consistency with warm water if it thickens after chilling.
