This Quick Salted Caramel Pecan Pie Cobbler delivers the soul of a Thanksgiving classic without the fuss. Ready in 30 minutes, it features a gooey salted caramel layer, crunchy pecans, and a soft cobbler topping—perfect for weeknight cravings.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup packed light brown sugar
  • 1 cup chopped pecans
  • 1 1/2 cups boiling water
  • 1 teaspoon flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 9×9 baking dish in the oven while it preheats.
  2. In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk and vanilla extract, then whisk until just combined. The batter should look thin, almost like pancake batter. Set aside.
  3. In a small bowl, stir together the brown sugar and chopped pecans until evenly coated.
  4. Carefully remove the hot baking dish from the oven. Add the melted butter and swirl to coat the bottom. Pour the cobbler batter directly over the butter—do not stir. Sprinkle the brown sugar and pecan mixture evenly over the top. Do not stir.
  5. Carefully pour the 1 1/2 cups of boiling water evenly over the entire mixture. Do not pour all in one spot.
  6. Bake for 28-32 minutes, or until the top is golden brown and the center is set but still slightly jiggly. The edges should be bubbling and the pecans toasted.
  7. As soon as the cobbler comes out of the oven, sprinkle the flaky sea salt evenly over the top. Let it cool for at least 10 minutes before serving.

Notes

Don’t skip the hot dish step—it creates crispy edges. The water must be boiling when added. Let the cobbler rest for 10 minutes before serving to allow the caramel to thicken. If the top browns too quickly, tent with foil for the last 5-7 minutes.
