A fast, fun, and festive Halloween veggie tray with a creamy homemade ranch dip. Using small cookie cutters to shape vegetables turns a boring platter into something genuinely spooky without requiring artistic talent.

Ingredients

Scale
  • 1 large English cucumber
  • 2 bell peppers (one orange, one yellow)
  • 4 medium carrots
  • 1 pint cherry tomatoes
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 1 cup snow peas
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Make the ranch dip: In a medium mixing bowl, combine sour cream, mayonnaise, fresh dill, fresh chives, garlic powder, onion powder, dried parsley, salt, black pepper, and lemon juice. Whisk until smooth. Cover and refrigerate.
  2. Prep the cucumber: Wash and slice cucumber into ½-inch thick rounds. Use a small ghost-shaped cookie cutter to stamp out shapes from each round.
  3. Shape the bell peppers: Wash peppers, remove tops and seeds, slice into ½-inch thick rings. Use a pumpkin-shaped cookie cutter to stamp out shapes.
  4. Cut the carrots: Peel carrots and cut into ½-inch thick rounds. Use a small bat-shaped cookie cutter to stamp out shapes.
  5. Prepare remaining veggies: Wash cherry tomatoes and leave whole. Cut broccoli and cauliflower into small florets. Trim snow peas if needed. Pat all vegetables dry.
  6. Assemble the tray: Place the bowl of ranch dip in the center of a large serving platter. Arrange shaped vegetables around the dip in a circular pattern. Fill gaps with cherry tomatoes, broccoli, cauliflower, and snow peas.
  7. Final touches: Sprinkle fresh dill over the dip. Serve immediately or cover and refrigerate for up to 4 hours.

Notes

Chill vegetables for 15 minutes before cutting for cleaner shapes. Press cookie cutters straight down without twisting. Make dip a day ahead for best flavor. Save veggie scraps for stock.
