A quick and easy 3-ingredient summer recipe combining fresh strawberries, lemon juice, vodka, and simple syrup to create a sweet, tangy, and icy slushie perfect for hot days.

  • 2 cups fresh strawberries, hulled and roughly chopped
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 1 cup vodka (smooth, neutral brand like Tito’s or Smirnoff)
  • 1/3 cup simple syrup (homemade or store-bought)
  • 4 cups ice cubes (crushed preferred)
  • Optional: fresh mint leaves for garnish
  • Optional: strawberry or lemon slices for decoration
  • Optional: superfine sugar to sweeten lemon juice

Instructions

  1. Rinse and hull about 2 cups of fresh strawberries. Roughly chop them to make blending easier.
  2. Using a citrus juicer or by hand, extract 1/2 cup (120 ml) of fresh lemon juice. Strain to remove seeds if needed.
  3. If making homemade simple syrup, combine equal parts sugar and water in a small saucepan over low heat. Stir until sugar dissolves, then cool completely. You’ll need about 1/3 cup (80 ml).
  4. Add the chopped strawberries, fresh lemon juice, 1 cup (240 ml) vodka, 1/3 cup (80 ml) simple syrup, and about 4 cups (about 1 liter) of ice cubes into the blender.
  5. Pulse and blend on high until the mixture has a smooth, icy slush texture, about 30-45 seconds. The consistency should be thick but still pourable.
  6. Taste and adjust sweetness by adding more simple syrup if too tart, or blend in a splash of cold water or more lemon juice if too thick.
  7. Pour into chilled glasses, garnish with fresh mint or strawberry slices if desired, and add a straw. Serve immediately.

Notes

Use fresh strawberries and lemon juice for best flavor. Crushed ice blends better for a perfect slush texture. Avoid overblending to prevent watery texture. Chill glasses before serving to keep slushies colder longer. For non-alcoholic version, omit vodka and add lemon-lime soda or sparkling water. Simple syrup can be homemade or store-bought; adjust sweetness to taste. You can prep fruit and lemon juice mixture ahead and freeze, then blend with vodka and ice when ready. Avoid freezing vodka mixture to maintain texture.
