These rich flourless dark chocolate brownies deliver a deep, fudgy texture and intense chocolate flavor, perfect for a keto lifestyle without compromising on taste or richness.

Ingredients

Scale
  • 6 ounces (170g) dark chocolate (70% or higher), chopped or chips
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (75g) almond flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 cup (100g) granulated erythritol or monk fruit sweetener
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy lifting.
  2. In a double boiler or microwave-safe bowl, gently melt the dark chocolate and unsalted butter together, stirring frequently until smooth and shiny. Set aside to cool slightly (about 5 minutes).
  3. In a medium bowl, whisk together almond flour, cocoa powder, erythritol, and salt.
  4. In a separate bowl, lightly beat the eggs with vanilla extract until frothy (about 1-2 minutes).
  5. Slowly pour the melted chocolate mixture into the beaten eggs while stirring gently. Gradually add the dry ingredients and fold until just combined, avoiding overmixing.
  6. If using, fold in the chopped walnuts or pecans.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 20-25 minutes, checking at 20 minutes for doneness. The edges should be set but the center slightly soft.
  9. Cool completely in the pan on a wire rack for at least 30 minutes before slicing.
  10. Use the parchment overhang to lift brownies out, slice into 9 squares, and serve.

Notes

Do not overbeat the eggs to keep the batter tender. Slightly underbake to maintain a fudgy center. Cool completely before slicing for best texture. Use quality dark chocolate (70% or higher) for best flavor. Optional nuts add crunch. Store in airtight container at room temperature up to 3 days or refrigerate up to a week.
