  • 8 ounces cremini or baby bella mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream (or half-and-half for lighter gravy)
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
  • 1 tablespoon all-purpose flour (or gluten-free flour)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder.
  2. In a large skillet over medium heat, melt the butter. Add the sliced mushrooms and cook until they release moisture and start to brown, about 6-8 minutes.
  3. Add the minced garlic and chopped onion to the skillet and cook another 2-3 minutes until fragrant and softened.
  4. Sprinkle the tablespoon of flour over the mushroom mixture. Stir well and cook for 1-2 minutes to remove raw flour taste.
  5. Slowly pour in the chicken broth while stirring, scraping browned bits from the pan bottom. Let simmer for 2-3 minutes until slightly thickened.
  6. Pour the mushroom mixture into the slow cooker. Nestle the seasoned chicken breasts on top and add the thyme.
  7. Cover and cook on low for 3.5 to 4 hours until chicken is tender.
  8. About 20-30 minutes before serving, pour the heavy cream into the crockpot. Stir gently and cook with the lid off to thicken the gravy slightly, avoiding boiling.
  9. Taste the gravy and adjust seasoning with salt and pepper if needed. Sprinkle fresh chopped parsley over the dish.
  10. Serve the chicken breasts with generous ladles of creamy mushroom gravy.
