A healthier, from-scratch version of the classic green bean casserole featuring tender-crisp green beans, a silky homemade cream sauce with roasted mushrooms, and a crunchy fried onion topping. Perfect for holidays, potlucks, or a comforting weeknight side dish.

Ingredients

Scale
  • 1½ pounds fresh green beans, trimmed and halved
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • ½ cup heavy cream
  • ½ cup low-sodium chicken or vegetable broth
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ¼ teaspoon nutmeg, freshly grated
  • 2 large yellow onions, thinly sliced into rings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup panko breadcrumbs
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • Neutral oil, for frying

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and cook for exactly 3 minutes until bright green and tender-crisp. Transfer to an ice bath to stop cooking, then drain well and set aside.
  2. Preheat oven to 400°F (200°C). Toss sliced mushrooms with 1 tablespoon melted butter and a pinch of salt on a baking sheet. Roast for 12-15 minutes until golden brown and moisture has released.
  3. In a large skillet over medium heat, melt remaining 2 tablespoons butter. Add chopped onion and cook 4-5 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant. Sprinkle flour over vegetables and stir constantly for 1-2 minutes.
  4. Slowly pour in milk, heavy cream, and broth while whisking continuously to prevent lumps. Bring to a gentle simmer and cook 3-4 minutes until sauce thickens enough to coat the back of a spoon. Stir in roasted mushrooms, thyme, nutmeg, salt, and pepper. Adjust seasoning to taste.
  5. For crispy onions: Soak sliced onions in buttermilk for 10 minutes. In a shallow dish, mix 1 cup flour, panko, paprika, garlic powder, and ½ teaspoon salt. Heat ½ inch oil in a deep skillet to 350°F (175°C). Working in batches, dredge soaked onions in flour mixture, shaking off excess. Fry 2-3 minutes per side until deep golden brown. Drain on paper towels and season immediately with salt.
  6. Reduce oven temperature to 375°F (190°C). In a large bowl, combine blanched green beans with cream sauce, stirring gently to coat. Transfer to a greased 9×13-inch baking dish. Top generously with crispy fried onions.
  7. Bake for 20-25 minutes until bubbly around edges and topping is deeply golden. Let rest 5 minutes before serving.

Notes

Don’t skip blanching the green beans—it ensures even cooking and vibrant color. Toast the flour for 2 minutes to avoid a raw taste. Keep heat medium-low when adding dairy to prevent curdling. Fry onions in batches to maintain oil temperature. The cream sauce can be made up to 2 days ahead and stored in the fridge. For make-ahead, assemble casserole without onions, refrigerate up to 24 hours, add onions and bake 10 minutes longer.
