  • 6 bone-in, skin-on chicken thighs (about 2 lbs or 900g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ⅓ cup pomegranate molasses
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon soy sauce or tamari
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup fresh pomegranate arils
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and cumin. Let them sit at room temperature for 10 minutes while you prepare the glaze.
  2. In a small bowl, whisk together the pomegranate molasses, honey, soy sauce, minced garlic, grated ginger, and red pepper flakes (if using). Set aside.
  3. Heat your oven-safe skillet over medium-high heat. No oil needed. Place the chicken thighs skin-side down in the hot skillet. Cook undisturbed for 5-7 minutes, until the skin is deep golden brown and crispy.
  4. Using tongs, carefully flip the chicken thighs. Pour the pomegranate glaze over the chicken, making sure each piece gets coated. Let it cook for 1 minute on the stovetop.
  5. Transfer the skillet to the preheated oven. Bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove the skillet from the oven. Let the chicken rest for 5 minutes. Sprinkle fresh pomegranate arils, chopped parsley, and sesame seeds over the top.

Notes

For extra sticky caramelized glaze, spoon some pan juices over the chicken before serving. If using boneless, skinless thighs, reduce cooking time to about 20 minutes total. To make gluten-free, use tamari instead of soy sauce. The glaze can be prepared up to 3 days in advance.
