This homemade apple crisp features a buttery oat and pecan crumble topping over tender, spiced apples. It’s a simple, comforting dessert that’s perfect for any occasion and comes together in about an hour.

Ingredients

Scale
  • 6 medium apples (about 2.5 pounds), a mix of Honeycrisp and Granny Smith
  • 1/4 cup granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup rolled oats (old-fashioned)
  • 3/4 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Peel, core, and slice apples into 1/4-inch thick pieces. Place in a large bowl.
  3. Add granulated sugar, 2 tablespoons brown sugar, lemon juice, cornstarch, 1 teaspoon cinnamon, nutmeg, and 1/4 teaspoon salt to apples. Toss to coat.
  4. Transfer apple mixture to a large skillet or saucepan. Cook over medium heat for 5-7 minutes, stirring occasionally, until juices thicken and apples look glossy.
  5. Pour warm apple mixture into prepared baking dish and spread evenly.
  6. In a separate bowl, whisk together rolled oats, flour, chopped pecans, 1/2 cup brown sugar, 2 tablespoons granulated sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt.
  7. Add cold cubed butter to dry ingredients. Use a pastry cutter, two forks, or fingertips to cut butter into mixture until it resembles coarse sand with pea-sized pieces.
  8. Sprinkle crumble topping evenly over apple filling. Do not press down.
  9. Place dish on a baking sheet. Bake for 40-45 minutes, until topping is golden brown and filling is bubbling around edges. If topping browns too quickly, tent with foil for last 10 minutes.
  10. Remove from oven and cool on a wire rack for at least 10 minutes before serving.
  11. Serve warm with vanilla ice cream or a drizzle of heavy cream.

Notes

Do not skip the stovetop step for the apples—it prevents a gap between filling and topping. Use cold butter for the crumble. Toast pecans for deeper flavor. Let crisp rest 10 minutes before serving for best texture. Can be assembled up to 24 hours in advance and refrigerated.
