This Homemade Immune-Boosting Elderberry Syrup with Honey & Ginger is a simple, delicious, and effective way to support your family’s immune system during cold season. Made with just four main ingredients, it’s a comforting and rewarding recipe that has become a staple for wellness.

  • 1 cup dried elderberries
  • 2-inch piece fresh ginger, thinly sliced
  • 1/2 to 3/4 cup raw honey
  • 4 cups filtered water
  • 1 cinnamon stick (optional)
  • 3 to 4 whole cloves (optional)
  • Peel from 1 organic orange (optional)

Instructions

  1. Combine the dried elderberries, sliced ginger, and filtered water in a medium to large saucepan. If using, add the cinnamon stick and cloves.
  2. Bring the mixture to a rolling boil over high heat, then reduce the heat to low and let it simmer gently for 30 to 40 minutes. The liquid should reduce by about half, and the berries will look plump.
  3. After about 30 minutes, gently mash the berries with the back of a spoon or a potato masher to release more flavor.
  4. Place a fine-mesh strainer over a large bowl or pot. Pour the mixture through the strainer, pressing on the solids to extract all the liquid. Discard the solids.
  5. Let the liquid cool for 10 to 15 minutes until it reaches about 110°F to 120°F (warm to the touch, not hot).
  6. Stir in the raw honey until fully dissolved. Taste and adjust sweetness if desired.
  7. Using a funnel, pour the syrup into sterilized glass jars, leaving about 1/2 inch of headspace. Seal tightly.
  8. Let the jars cool to room temperature, then refrigerate. The syrup will keep for 2 to 3 months in the refrigerator.

Notes

Do not add honey to boiling liquid as it will destroy beneficial enzymes. Let the liquid cool to warm before adding honey. For a vegan version, substitute honey with maple syrup, but note the shelf life will be shorter. The syrup can be frozen in ice cube trays for up to 6 months.
