These brown butter garlic mashed potatoes are creamy, rich, and infused with nutty brown butter and sweet, mellow garlic. An easy, comforting side dish perfect for weeknights or holidays.

Ingredients

Scale
  • 2 pounds russet potatoes (about 4 medium), peeled and cut into 1.5-2 inch chunks
  • 1/2 cup (1 stick or 113 grams) unsalted butter
  • 6 to 8 medium garlic cloves, peeled
  • 1/2 cup (120 ml) whole milk, warmed
  • 1 teaspoon fine sea salt, plus more for boiling water
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 2 tablespoons chopped fresh parsley or chives for garnish

Instructions

  1. Peel the potatoes and cut them into uniform 1.5 to 2-inch chunks. Rinse in cold water to remove excess starch; do not soak.
  2. Place potato chunks in a large pot and cover with cold water by about an inch. Add 1 tablespoon salt. Bring to a boil over high heat, then reduce to a simmer. Cook until fork-tender, about 15-18 minutes.
  3. While potatoes boil, cut butter into pieces and place in a small skillet or saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until butter foams, subsides, and turns deep amber with a nutty aroma. Add garlic cloves and cook, swirling constantly, until garlic is soft and lightly golden, about 2-3 minutes. Remove from heat immediately.
  4. Drain potatoes in a colander and let steam for about 1 minute to remove excess moisture. For extra dryness, return to the hot pot over low heat for 1 minute, shaking occasionally.
  5. Return drained potatoes to the pot or a large bowl. Mash with a potato masher to desired consistency (leave some lumps for texture if preferred). Do not over-mash.
  6. Pour the brown butter and garlic cloves over the mashed potatoes. Mash the soft garlic cloves into the potatoes with a fork or mix thoroughly. Stir gently to evenly distribute.
  7. Add the warm milk, salt, and pepper. Stir gently until incorporated. Taste and adjust seasoning, adding more salt if needed. If too thick, add a splash more warm milk; if too thin, let sit for a minute to thicken.
  8. Transfer to a serving bowl. Garnish with fresh herbs if desired. Serve hot.

Notes

For best results, use a light-colored pan to monitor butter color. Warm milk before adding to prevent potatoes from becoming gluey. Start potatoes in cold water for even cooking. Brown butter can burn quickly; remove from heat as soon as it turns amber and smells nutty. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
